Baked Chocolate Mousse - Instant Dopamine Rush!

I have always had my eye on trying this recipe. And once I did, It became my all time favorite dessert. It even made it to the list of dishes that I would serve once I open my restaurant (hopefully in the next years).


This gooey moist hot chocolate fusion with the cold ice cream flavor vanilla or caramel is heavenly. It's like an instant dopamine rush into your brain!


Moving on to the recipe!

Ingredients:

- 250 g Unsalted Butter

- 350 g Dark Chocolate

- 250 g Brown Sugar

- 5 Large Eggs

- Salt

- Icing Sugar or Coco Powder for Dusting


Directions:

- In a pot, at medium heat, add boiling water. Add the butter and the chocolate in a heat proof bowl. Once the water start boiling, lower the temp, then place the bowl on top of the pot. This is called a bain-marie. A tip to make this work, always make sure that the bottom of the bowl doesn't touch the water. If it did, lower the water level in the pot.

- Stir it till the chocolate is melted and you have a smooth glossy texture.

- Remove the bowl from the top of the bowl and let it cool for a while.

- In a bowl, separate the eggs whites from the yolks. Keep it in separate bowls.

- Add salt into the eggs whites, and start beating it with a whisker till you get a foamy texture.

- In the melted chocolate bowl, Add the sugar and stir it in. Then start adding the egg yolks one at a time. Stir till it's well mixed.

- Fold in the chocolate mixture into the egg whites. Mix it using the folding technique till you get a smooth texture.

- Preheat the oven at 180 C. In a 9 inch round pan, add baking paper then pour the mixture in. Once you do, hit the pan into the kitchen counter twice just to make sure that the batter reached the bottom and is spread evenly.

- Let it bake for an hour.

- Do a test, Press your finger to the center it should leave an impression not bounce back.

- Dust it with some icing sugar or coco powder. Serve with cold ice cream.
