Roasted Chicken Recipe - Quick & Easy Dinner!

Next time you have a lot on your mind and ran out of time to prepare dinner for your family or even for your guests, try this roasted chicken recipe. All you need is a chicken and whatever veggies you have in your fridge!


The preparation time is barely 10 minutes, so you can put your dinner in the oven while getting on with your day.


For this recipe, I have used mixed of sweet and normal potatoes. No particular reason for it, but I am an advocate to always use whatever you have in your fridge first. You don't want your vegetables to go to waste. I have used a series of spices from Ina Paarman's which are my favorite in the market and I used Maggie Coriander and Garlic ready mix. If you don't have it, you can always skip it and used your regular spices. Nothing can hold you back!


Moving on to the recipe!


Ingredients:

- 1 Full Chicken

- Mixed of Potatoes - Sweet and Normal - or Whatever Veggies You have in your Fridge.

- Vinegar

- Ina Paarman's Garlic & Herb Spice

- Ina Paarman's Potato Spice

- 10 Garlic Cloves

- 4 Lemon

- Garlic Powder

- Paprika

- Salt & Black Pepper

- Olive Oil


Directions:

- Flip your chicken so that the back side of it is facing you, then insert your knife 1 cm away from the center of the back from the right, and cut it from the top to the bottom. Do the same for the left side. (See Video below)

- You will be left with 2 cm back piece which you can throw it away.

- Using vinegar, clean your chicken from inside out and let it soak for a couple of minutes.

- In a small bowl, add crushed garlic and squeeze 3 lemons. Add in Salt, black pepper, garlic & herb spice, potato spice, garlic powder and olive oil. Mix it well.

- Cut the potatoes in round shape, then in a bowl, add salt, black pepper, garlic powder, paprika, garlic & herb, potato spice, olive oil and 1 lemon juice onto the potatoes. Mix it well!

- Remove the chicken onto a bowl, then add the spices mixtures. Try to rub it under the skin and if you have time let it soak with the spices for a couple of hours.

- Now, we have the chicken and potatoes ready. Preheat the oven to 180 C.

- Add Parchment into a baking tray, Add in the potatoes, then place the chicken flat on top with all the extra spices we have. Add 1 cup of warm water. Cover with foil to keep the chicken juicy then into the oven for 1 hour.

- After 1 hour, remove the foil and let it roast to have a nice golden color for 15-30 minutes depends on your oven heat.
