Beef Fajita Recipe – Vibrant Colors and Amazing Flavors!

As we are entering the second month of quarantine, we are all in a different mindset from where we started. Each person adapted with the stay at home orders a different manner.


For a start, we were happy to work from home in our pyjamas and not to have to drive to work and see your annoying colleagues face to face. We tried to keep our routine going with working out at home, we started baking – The banana bread was a big win within the social media users. 


Now, and speaking for myself, I can't wait to go back to my routine. The actual act of waking up, dressing up, drive to my workplace and have a different scenery is something I miss.

Other people are hating this lockdown, don’t mind working from home but can't wait to go clubbing.


People have different interests and expectations from life. But one thing, I found in common that people are constantly making. Either while working, or developing a skill you have been eager to learn, or actually creating that blog you have always talked about, taking online classes through skillshare or masterclass and other.


People are constantly making and I believe it is part of our survival mode as homo sapiens.  This is what keeps us moving. We are considered wise species, as our brain constantly adapt with change. 


The only constant thing in our life is change!


Now to add some vibrant vibes to this blog, I will share my Beef Fajita Recipe for your next family Mexican night! Fire up some Latina music and Dance your night away!

For the Beef Marination, you will need:

- 2 tbsp Olive Oil

- 1/3 cup Lime Juice

- 2 tbsp Coriander

- 2 Garlic Cloves Crushed

- 1/2 tsp Cumin

- 1 tsp Salt

- 1 tsp Paprika

- 1 tsp Black Pepper

For the rest:

- 500 g of Tenderloin Beef in Long Cuts

- 3 Medium Onions Chopped in trenches

- 3 Bell Peppers (different colors)

- 2 Ripe Avocados

- 1 Garlic Clove Crushed

- 2 tbsp Lime Juice

- 2 tbsp Coriander Chopped

- 1 cup of Cheddar Cheese

- Salt and Black Pepper for Taste


Directions:

- In a cup , mix all the marination ingredients.

- In a bowl, Mix half the marination quantity prepared with the tenderloin beef. Keep the beef marinated for 4 hours.

- Get your chopping board, and start chopping the onions and bell pepper in long cuts.

- Peel off the pieces of avocados. Cut one piece in long cuts for garnishing the plate and smash the other avocado with 2 tbsp lime juice, 1 garlic clove crushed, 2 tbsp of coriander, pinch of salt and black pepper to get your guacamole ready.

- On a medium heat pan, pour some olive oil and add the marinated beef. Keep stirring till the beef is cooked. Tenderloin beef is easy and quick to cook.


- Remove the cooked beef from the pan, and add the chopped veggies with some black pepper. Keep Stirring at high heat for not more than 5 minutes, we want to keep these veggies crunchy.

- In a round serving plate, place your grilled beef and veggies and pour the rest of the marination on it. Add the Long cut avocados, Cheddar cheese, squeeze some lime, garnish with coriander.

- Serve it with the prepared guacamole, sour cream, hot salsa, tortilla or tacos.
