French Toast or Pain Perdu Recipe – Having Dessert for Breakfast!

You don’t know the number of times I have tried a recipe trying to master it and failed. But I never stopped, I went back and dug deeper in researches and many recipes from different accounts trying to find my way to the traditional recipe.


Think of failure as a lesson learned. Where did it go wrong? Was there something missed out in your plans? Were your goals realistic? Or was it just bad luck? 


Personally, I don’t believe in bad luck. I believe in a good plan with realistic goals. I know so many people where they gave up on their passion and to make anything out of it.


Think of your journey as realistic mini goals you can to achieve in the short term. You plan your first mini goal according to the worst-case scenario so you would be prepared to the bumps on the roads. One mini goal achieved after the other, you will find yourself closer to where you wanted to be in the beginning.


Another trick I use which might be odd to you, is having low expectation. You plan, you have your mini goals, you are realistic and you still couldn’t achieve that goal. With low expectation, you won’t be disappointed. I always say to myself; you are doing what you love (which is cooking, gathering people and sharing recipes) even if you don’t make it, this is totally fine. I didn’t lose but gained an experience to my journey.


So coming back to the French toast, I finally mastered a recipe and knew where it went wrong when I first tried it. The key was in the bread! Never use sandwiches bread! Never!

Ingredients:

- Challah Bread or Brioche Bread

- 2 Large Eggs

- 1/2 Cup Whole Milk

- 1 Tsp Vanilla Powder

- 1 Tbsp Sugar

- Pinch Salt

- 1/2 Tsp Cinnamon

- 1/4 Tsp Nutmeg

- Unsalted Butter

- Vegetable Oil


For the Topping:

- 4 Tbsp Butter

- 1/4 Cup Brown Sugar

- 2 Firm Bananas

- Pinch of Cinnamon


Directions:

- Cut the Challah bread or Brioche bread in slices.

- In a bowl, crack the eggs, whisk it then add the milk, vanilla, sugar, salt, cinnamon and nutmeg. Whisk it till its foamy.

- In a flat tray, Pour the batter in it. Then soak the sliced bread 3 minutes on each side.

- In a medium heated pan, Add 1 Tbsp of Butter and 1 Tbsp Veg Oil. Once the butter melted, fry the soaked bread 3 to 5 minutes on each side till its golden. Add more butter and veg oil every time to add other slices of bread.

- In a heated pot, Add the sugar and butter. Let it simmer till it caramelized. Then add the sliced bananas and Cinnamon.

- Pour the bananas topping the fried bread.
