If it’s for Sohour or for Breakfast, you must try my Turkish eggs Recipe!

One of the most turning points of my life was in 2014 when I have decided to leave my home country Lebanon and accept a job offer in Abu Dhabi. Leaving the place I have lived on for 23 years was not easy, the move had a very big impact on me from many aspects. 


The biggest change during this move was culturally. Living in a country for 23 years where everyone you have spoken to, dealt with, lived with were Lebanese coming from almost the same culture, eating the same food and having the same mindset.


In UAE, I have opened up to many cultures and nationalities. I have befriended the Syrian, Indian, Iranian, Yemeni, Egyptian, Palestinian, Jordanian, Mauritius, Sudanese, South African and much more. Opening up to these cultures was interesting as I have to come to learn more about their traditions, their countries and their cuisines. 


One of the dishes I have encountered and really interested me was Turkish Eggs.


Yoghurt? Poached Eggs? Paprika? All Together. Trust me, this will be the best breakfast / Sohour you will every experience.

Ingredients:

- 150 ml of Greek yogurt

- 1/2 clove of garlic crushed

- 1 table spoon dill

- 1 table spoon olive oil

- 3 table spoon butter

- 1/2 tea spoon paprika

- 2 Poached Eggs

- handful of chopped parsley

- Toasted Bread


Directions:

- Step 1: Prepare the Yogurt

In a bowl, Whisk the Greek yogurt with the garlic, dill, olive oil and some seasoning (salt & Black Pepper).

- Step 2: Poach the Eggs

In a pot, at medium heat, Add boiled water with 1 table spoon of white vinegar.

Crack the egg in a small bowl. Using a whisker, Swirl the water then spill the egg in the center. Keep a kitchen drying tissue on the side to drain the egg. Wait 2 minutes if you want your eggs soft and 5 minutes if you want your eggs hard. Using a spatula, remove the egg and place it on the tissue to dry. - Step 3: Prepare the topping

In a hot pan, melt the butter, then add the paprika. Stir at low Heat.

- Step 4: Put it all together

In a flat plate, pour the yogurt first, then place the eggs on top. Season with salt and pepper, Pour the butter mix on top then garnish with chopped parsley.


It is as easy as it sounds!
