Spinach Cheese Dip! The Perfect Appetizer for Gatherings!

The thing that I love more than cooking is gathering people around my dining table. Being quarantined alone during this pandemic was not as bad as I thought. Some might debate the importance of people in their lives. But for me it is different. It is not about the physical presence. If you are just eager to see them and felt disconnected from them during this pandemic, then dear these are not the people you should be having in your life.


You should not feed your own happiness from people while you are not happy within yourself. If you are not happy with you sitting by yourself at home then you need to explore and discover who you are and what you really want. Happiness is a state of mind you put yourself in. It shouldn’t come from the physical presence of people but from yourself then from your support system.


Me being single expat in the UAE, my support system are my friends living in the UAE and aboard who I have known for years, and even if I didn’t see them for a long time, we are closer than ever and we connect on regular basis. And for that I am thankful.


When combining your self-made happiness with the right support system, your journey will be much easier and peaceful.

Ingredients:

-200 g Frozen Spinach

-Artichoke (Optional)

-1 Cup Sour Cream

-200 g Cream Cheese

-1 Cup Mozzarella Cheese

-1/2 Cup Parmesan Cheese

-1 Clove Garlic Crushed

-Garlic Powder

-Salt & Pepper


Directions:

- In a small Cooking pot, add the frozen spinach. Let it simmer till all the water is evaporated. - Add the garlic and let it simmer for a couple of minutes.

- Add the cooked spinach in a bowl. Add the sour cream, cream cheese, mozzarella cheese, Parmesan cheese and mix it well.

- Season it with garlic powder, salt and black pepper.

- Add the spinach mix into a tajin or a safe oven plate. Add mozzarella cheese on top.

- Preheat the oven at 180. Then let the spinach dish cook till it boils (This should take 10-15 minutes). Then switch the oven burner to top to broil it.
